East Montpelier Squash

We have harvested our East Montpelier Squash. The color of these squash is lighter than they should be but it may be due to the age of the seeds used. The flesh of this squash is a dry texture with a sweet, nutty flavor and the seeds have a thin skin and so are good for roasting and eating if you are not preserving the seeds. We will continue to grow the squash and preserve the seeds so that future generations may be able to eat our traditional foods.
